The Great Grapefruit
We’re smack-dab in the middle of grapefruit season (October–May) and Jan. 23 is Texas Red Grapefruit Day. The official state fruit of Texas is prime for the picking. Whether you crave a temptingly sweet grapefruit pie or a healthy salad with a tangy topper, the Lower Rio Grande Valley provides the fruit and we share some of our favorite recipes. TexasSweet Citrus Marketing, Inc. shares a few, as well.

Pour remaining 1 c. of juice in blender container. Add egg yolks, 1/2 c. sugar, salt, cream cheese, sour cream, and food coloring. Whirl smooth. Add dissolved gelatin and blend 5 seconds more. Chill until slightly thickened.
Beat egg whites with 2 T. sugar until stiff. Fold egg whites into gelatin mixture.
