Texas Highways reader Karen Beverly shares her recipe for peach cobbler.
Preheat oven to 375
- 4 cups peeled peaches (Texan, of course)
- 1/2 cup butter
- 1 cup flour
- 1 tbsp. baking powder
- 1 1/2 cups sugar
- pinch of salt
- 1 1/2 cups milk
- 1 tbsp. cinnamon
Melt a half cup butter and pour into bottom of 13x9 glass pan.
Mix flour, baking powder, 1 cup sugar, salt and 1 1/2 cups milk until fairly smooth.
Pour over butter but do not mix.
Sprinkle about 1/2 cup of sugar and cinnamon over peaches and mix. Spread seasoned peaches over dough mixture evenly, don't mix.
Bake about 40 to 45 minutes.
Karen's Tip: One secret to peeling peaches is to drop the peach in boiling water, let it sit about a minute, take it out and rinse if too hot to touch, then peel with fingers. The peel should come right off.
