The Great Grapefruit
We’re smack-dab in the middle of grapefruit season (October–May) and Jan. 23 is Texas Red Grapefruit Day. The official state fruit of Texas is prime for the picking. Whether you crave a temptingly sweet grapefruit pie or a healthy salad with a tangy topper, the Lower Rio Grande Valley provides the fruit and we share some of our favorite recipes. - 3 or 4 Ruby Red grapefruits (divided)
- 2 packages unflavored gelatin
- 2 eggs, separated
- 1/2 c. plus
- 2 T. sugar
- 1/8 tsp. salt
- 1 8-oz. package softened cream cheese
- 1 c. sour cream
- 3 drops red food coloring (optional)
- 1 9-in baked pie shell
- Maraschino cherries
Peel and section one grapefruit. Carefully remove membrane; set section aside for garnish. Halve and juice the remaining fruit. Strain juice, measure 1 1/2 cups.
In a small saucepan, soften gelatin in 1/2 c. juice, then dissolve over low heat. Set aside.
Pour remaining 1 c. of juice in blender container. Add egg yolks, 1/2 c. sugar, salt, cream cheese, sour cream, and food coloring. Whirl smooth. Add dissolved gelatin and blend 5 seconds more. Chill until slightly thickened.
Beat egg whites with 2 T. sugar until stiff. Fold egg whites into gelatin mixture.
Pour into pie shell and chill until firm. Garnish with grapefruit sections and cherries.

Rio Ramen Salad
- 4 cups torn fresh spinach
- 4 cups broccoli slaw
- 6 green onions, thinly sliced (tops included)
- 3/4 cup purchased red wine and vinegar salad dressing
- 1/2 teaspoon freshly ground black pepper
- 3 Texas Rio Star Grapefruit, 1 juiced and 2 sectioned
- 1 (2 1/2 oz.) pkg. Ramen noodles, lightly toasted and broken
- 1/4 cup sesame seeds, lightly toasted
In a large bowl toss together spinach, coleslaw mix, and onions, then chill.
In a small jar, shake together salad dressing, pepper, and ¼ cup of grapefruit juice (refrigerate remaining juice for another use.) then chill.
Just before serving, add grapefruit sections, noodles and sesame seeds to salad.
Pour dressing over top and Toss to evenly coat.
Serve immediately.
