Orange Nut Honey Bread

2 T. shortening

1 c. honey

1 egg

1 1/4 T. orange peel, grated

2 1/4 c. flour, sifted

1/2 tsp. soda

1/2 tsp. salt

2 1/2 tsp. baking powder

1/4 c. orange juice

1/4 c. pecans, chopped

Cream shortening and honey together thoroughly. Add well-beaten egg and grated orange peel. Sift flour with other dry ingredients and add to creamed mixture alternately with the juice. Add nuts. Bake in greased loaf pan in moderate over (325 degrees) for 70 minutes. Serve with cream cheese softened with honey.
