Serves 4
2 c. stone-ground yellow cornmeal 1/4 c. flour 1 tsp. baking soda 2 tsp. baking powder 1 tsp. salt 1/2 c. finely chopped onion 1 egg 1 1/4 c. buttermilk oil for frying Sift dry ingredients together in a bowl. Mix in onion and coat well. Add egg beaten into one c. of the buttermilk. Continue adding buttermilk. Batter should be stiff. Drop by spoonfuls into oil heated to 375 degrees. Fry until golden on all sides.
