Blueberry Oatmeal Muffins

Makes 12 muffins

 

1 1/4 c. uncooked oats

1 c. flour

1 T. baking powder

1/2 tsp. salt

1 c. milk

1 egg, beaten

4 T. honey

1/4 c. vegetable oil

3/4 c. fresh blueberries

Combine oats, flour, baking powder, and salt. Add milk, egg, honey, and oil; mix until dry ingredients are moistened. Fold in blueberries. Fill 12 greased medium sized muffins c. 2/3 full. Bake at 400 degrees for 20 to 25 minutes.
