Serves 6
1 c. cracklings, crushed 1 c. hot milk 1 1/2 c. cornmeal 1/2 c. white flour 1 tsp. baking powder 1 tsp. sugar 1/2 tsp. salt pinch salt 1 T. shortening, melted 1 egg Soak cracklings in hot milk. Sift dry ingredients together. Add shortening to milk, then pour over cornmeal mixture. Add egg and beat hard two or three minutes. Place in greased square pan. Bake at 350 degrees about 25 minutes. Cut into squares and serve hot.
