Buñuelos (crispy fried wafers)
Try your hand at the following recipe for panderia treats, provided by Mary Rosales of Mi Terra bakery in San Antonio. 4 c. flour 1 T. white vinegar 2 tsp. baking powder 1 egg 3 T. shortening 1/2 c. orange juice warm water oil for frying sugar and cinnamon Combine flour, vinegar, baking powder, egg, shortening, and orange juice. Add water to make a dough. Slice chunks of dough and roll very thin into the desired disk size. In a skillet large enough to hold the rolled disks of dough without bending, heat oil. Drop disks, one at a time, into the hot oil and fry until crisp. Remove from oil, drain on paper towels, and sprinkle with sugar and cinnamon.
