Castor Oil Cookies

3 c. flour 3/4 tsp. baking soda 3/4 tsp. salt 3/4 tsp. ginger 1/2 c. castor oil* 3/4 c. brown sugar 1 egg 1/2 c. molasses 1/2 c. milk 1 1/2 c. rolled oats
Lemon Icing 1 c. powdered sugar 1 T. lemon juice
Sift first 4 ingredients into a large mixing bowl. Blend in oil, sugar, egg, molasses, and milk. Stir in oats. Drop by teaspoonful onto greased baking sheet. Bake in 350 degree oven for 10-12 minutes. Cool slightly. Combine icing ingredients. Drizzle over cooled cookies.
*You can substitute 1/3 c. vegetable oil for the 1/2 c. castor oil See the full article in the October 1980 issue. |
