Mayonnaise

Harvey House built their reputation on the freshness and excellence of their fare. Menus offered a wide array of mouth-watering choices. Wanda A. Landrey of Beaumont collected a number of Harvey House recipes for her book Boardin' in the Thicket: Reminiscences and Recipes of Early Big Thicket Boarding Houses. Harvey House restaurants were known for making their own delicious salad dressings. Wanda Landrey tried several from the chef's manual and selected this tart mayonnaise recipe. She found it easy to prepare and says its distinct flavor makes it different from anything you can buy. 

2 eggs 
1 T. dry mustard 
3/4 tsp. salt 
1/2 tsp. white pepper 
1/4 tsp. red pepper 
1 T. flour 
2 c. salad oil 
3 T. boiling water 
2 T. fresh lemon juice 

Break eggs into mixing bowl. Add the next five ingredients. Mix until thoroughly blended. Slowly add salad oil. When mayonnaise thickens, add boiling water and lemon juice. Mix thoroughly.
