Fried Catfish II

Serves 4 

4 catfish fillets 
3/4 c. stone-ground yellow cornmeal 
1/4 c. flour 
salt and pepper to taste 
1 T. taco seasonings OR 1 tsp. cayenne pepper and 1/4 tsp. garlic powder oil for frying 

Wipe the fillets with a paper towel. Combine cornmeal, flour, and seasonings in a bowl or plastic bag. Coat fillets with mixture and fry in deep fat at 370 degrees until golden brown, about five or six minutes.
