Grilled Snapper

Serves 2 - 3 1 whole red snapper, cleaned 1/2 tsp. lemon pepper 1/4 tsp. basil 1/2 T. chopped parsley 1/2 tsp. paprika garlic salt to season 1/4 lb. clarified butter 2 T. lemon juice 1/2 tsp. smoke flavor
Combine lemon pepper, basil, and paprika. Season snapper with herb mixture and garlic salt. In a bowl, combine lemon juice, butter, and smoke flavor; baste snapper. Place snapper in oiled fish grilling basket over medium heat (coals burned down to gray). Close lid and smoke for 15 minutes. Turn fish basket and cook for another 10 minutes or until fish flakes. Season with more lemon butter and serve with lemon slice and fresh parsley.
