3 c. tomato juice 1 c. sour cream or yogurt 1/4 c. chopped onion 2 T. lemon juice 2 tsp. salt (adjust quantity according to saltiness of ham and tomato juice) 3/4 c. finely ground or chopped cooked ham 2 T. fresh basil 1 cucumber, coarsely chopped 1 c. chopped cantaloupe Chives for garnish
Blend tomato juice, sour cream, onion, lemon juice, salt, and ham. Chop basil fine and add to tomato mixture. Taste for seasonings. Chill well. Serve in a clear parfait glasses or dishes. Top each serving with one heaping teaspoon of both, cucumber and melon. Serve very cold. Garnish with chopped chives. Yields 10 servings.
