Crab-Stuffed Potatoes


Makes 6 servings 

1 lb. flaked crab meat, cooked 
6 large baking potatoes 
1/2 c. softened margarine 
1/2 tsp. salt 
1/2 tsp. black pepper 
1/4 tsp. paprika sprigs of parsley 
lemon wedges 


Remove all remaining shell and cartilage from crab meat. Refrigerate meat until ready to use. Bake potatoes in oven at 400 degrees for 45 minutes or in microwave according to instructions. Carefully scoop out potato, saving shells. Mash potato; beat in margarine, milk as needed, salt and pepper. Mix in crab meat. Pile mixture in potato shells. Sprinkle with paprika. Reheat in oven, allowing mixture to brown slightly. Garnish with parsley and lemon wedges.
