Beignets

  • 2 1/4 c. flour
  • 2 T. sugar
  • ⅛ tsp. baking soda
  • 1 1/4 tsp. baking powder
  • 1 1/4 c. milk
  • 2 eggs, well beaten
  • 1 tsp. vanilla extract
  • deep fat for frying

Sift all dry ingredients into a mixing bowl. Combine milk, eggs, and vanilla. Stir into dry ingredients. Mix well. Drop by spoonfuls into deep hot fat and fry until golden brown. Drain on absorbent paper. Serve warm with butter and syrup.
