Kartoffelpuffer (Potato Pancakes)

This recipe appears in Aunt Hank's Rock House Kitchen, written by Georgia Mae Smith Ericson in 1977. The author is the granddaughter of Henry Clay Smith (Heinrich Schmitt) and Elizabeth Boyle Smith (known affectionately as "Uncle Hank" and "Aunt Hank"), early pioneers on the North Texas plains.  Yield: 6-8 pancakes.

  • 2 c. grated potatoes
  • 1 small onion, grated
  • 2 eggs, well beaten
  • 2 T. flour
  • 1/8 tsp. salt
  • 1/2 c. vegetable oil
  • sugar
  • cranberry sauce (optional)
  • orange slices (optional)
  • parsley (optional)

Combine first five ingredients and mix well. Drain off excess liquid (if any). From into patties and fry in hot oil in shallow pan until evenly browned, turning once. Drain well on paper towels and sprinkle with sugar. Serve with cranberry sauce or cinnamon applesauce, and garnish with orange slices and parsley, if desired.
