Fresh Fruit Parfait

Alternate layers of vanilla-flavored yogurt, fresh fruit (we use blueberries, kiwi fruit, and peaches), and chilled Blueberry Sauce in a parfait glass and serve.

Blueberry Sauce

  • 1/2 c. sugar
  • 2 tsp. cornstarch
  • pinch of salt
  • 1/2 c. water
  • 2 c. fresh blueberries
  • 2 tsp. lemon juice 

In a medium saucepan, combine sugar, cornstarch, and salt. Add water and blueberries. Bring to boil; cook until thick and translucent. Remove from heat and add lemon juice. Serve warm or chilled over desired foods.
