Christmas Tree Cookies

  • 1 lb. granulated sugar
  • 1/2 lb. butter (2 sticks)
  • 3 eggs
  • 1 tsp. vanilla
  • 1 lb. flour (3 1/2 - 4 cups)
  • cinnamon to taste (1 tsp)
  • grated rind of 1/2 lemon

Preheat oven to 350 degrees. Cream sugar and butter until light. Add eggs, beating well after each addition. Add vanilla. Stir in flour and cinnamon. Blend in lemon rind.

Divide dough into two portions, wrap in waxed paper, and chill 1 or 2 hours. Roll each portion separately on a floured surface to a scant 1/4 inch thick. Cut with Christmas cookie cutters. Use a wooden pick or skewer point to make a hole in the top if you plan to hang the cookies on the tree.

Bake on greased cookie sheet at 350 degrees for 12-15 minutes. Cool on rack and decorate.
