Shay Thomas' Grand Prize Strawberry-Glazed Cheesecake

Strawberries have wonderful versatility in the kitchen. You can include them in cakes, pies, cobblers, and breads, swirl them into frozen desserts, use them as garnish, and slice them into salads. Strawberries provide a flavorful source of vitamin C, and they contain only 56 calories a cup, when eaten fresh.This luscious, rich Strawberry-Glazed Cheesecake baked by 12-year-old Shay Thomas took top honors during the 1988 Taste of Texas Food Show and Auction at Poteet. Shay's grand champion cheesecake (the first she ever baked) sold at the auction for $330.


  • 4 8-oz. packages cream cheese (softened)
  • 1 c. sugar4 eggs, well beaten
  • 1 T. vanilla

Whip all ingredients until fluffy. Pour into baked 9-inch graham cracker crust. Bake at 275 degrees for one hour.


  • 2 c. sour cream
  • 1 tsp. vanilla
  • 1 T. sugar

Spread topping over filling. Bake additional five minutes.


  • 1 c. fresh strawberries
  • 1 c. water
  • 1 package Knox flavored gelatin
  • 1/2 c. sugarsliced strawberries for garnish

Boil first four ingredients until sugar and gelatin dissolves. Cool. Drizzle glaze around outer edge of cheesecake. Garnish top of cake with fresh sliced berries. Chill and enjoy.
