Persimmon Cake

  • 1/2 c. shortening
  • 1/4 tsp. baking soda
  • 1 c. sugar
  • 2 c. flour
  • 1 c. persimmon pulp
  • 3 tsp. baking powder
  • 2 beaten eggs
  • 1/2 tsp. salt

Cream together the shortening and sugar, then add the pulp and eggs. Sift the other ingredients and add to the mixture. Beat well.

Pour into a greased pan and baked at 350 degrees for about one hour.
