Castor Oil Cookies

  • 3 c. flour
  • 3/4 tsp. baking soda
  • 3/4 tsp. salt
  • 3/4 tsp. ginger
  • 1/2 c. castor oil*
  • 3/4 c. brown sugar
  • 1 egg
  • 1/2 c. molasses
  • 1/2 c. milk
  • 1 1/2 c. rolled oats

Lemon Icing

  • 1 c. powdered sugar
  • 1 T. lemon juice

Sift first 4 ingredients into a large mixing bowl. Blend in oil, sugar, egg, molasses, and milk. Stir in oats. Drop by teaspoonful onto greased baking sheet. Bake in 350 degree oven for 10-12 minutes. Cool slightly. Combine icing ingredients. Drizzle over cooled cookies.

*You can substitute 1/3 c. vegetable oil for the 1/2 c. castor oil
