Peas and Ham Hot

Serves 8.

  • 3 1/2 c. cooked ham, cut in cubes
  • 1 1/2 c. cut celery
  • 1 c. diced green pepper
  • 1 medium onion, chopped
  • 1 small can water chestnuts, sliced
  • 3 1/2 c. cooked black-eyed peas, drained
  • 1 1/4 c. mayonnaise
  • 1 1/2 tsp. lemon juice
  • 1/3 c. crushed potato chips
  • 8 lettuce cups

Combine first eight ingredients and mix lightly. Pour into a greased 2 quart baking dish. Top with crushed potato chips. Bake in 350 degree oven for 25 minutes. Serve hot in lettuce cups.
