Enchiladas Suizas

Ingredients:
  • 12 tomatillos (green tomatoes)
  • 5 c. chicken stock
  • 2 medium garlic cloves
  • 1 small onion
  • 1/2 c. cilantro, chopped
  • salt and pepper to taste
  • 8 oz. Swiss cheese, grated
  • 8 corn tortillas

In a saucepan, place tomatillos and enough chicken stock to cover them. Add garlic, onion, and cilantro. Simmer until tomatillos are soft; purée in blender. Add salt and pepper to taste. Soften tortillas in a little hot oil. Spoon about a tablespoon of cheese in tortillas and roll, reserving some cheese for the top. Place tortillas in a baking dish and cover with tomatillo sauce. Sprinkle with remaining Swiss cheese. Bake at 325 degrees until enchiladas are thoroughly heated and cheese is melted, about 15 minutes.
