Christmas Hominy Casserole


  • 2 c. canned yellow hominy, drained and rinsed in cold water 
  • 1 c. canned mushroom soup 
  • 1 tsp. Worcestershire sauce 
  • 1/2 tsp. salt cornflakes rolled into crumbs 
  • 1 T. butter 
Mix the hominy, mushroom soup, Worcestershire sauce, and salt. Pour into a buttered casserole, sprinkle with the crushed cornflakes, and dot with butter. Bake at 300 degrees until brown. For a richer casserole, add one-half pound sliced and sautéed fresh mushrooms and 3 T. of heavy cream to the mixture before pouring it into the casserole.
