Okra and Tomatoes

 

 

Serves 6.

  • 1 onion, diced 
  • 1 green pepper (optional), chopped 
  • 3 T. butter or bacon fat 
  • 1/2 lb. okra, sliced 
  • 3 c. tomatoes, fresh or canned
  •  pinch sugar salt and pepper to taste 

Sauté onions and green pepper in fat. Add okra and fry five minutes. Add tomatoes, sugar, salt, and pepper. Cover and cook 15 minutes. Remove cover, and let simmer five minutes longer.
