Old-Fashioned Country Beans

Serves 4.

  • 1/2 lb. bacon ends 
  • 2 lbs. green beans
  • 2 onions 
  • 1 tsp. sugar 
  • 2 tsp. salt 
  • 1/4 tsp. red pepper 
  • 1 lb. new potatoes 

Cut bacon into chunks, cover with water, and boil 20 minutes. Wash and cut beans in half; and add hot water. Add onions to the beans, then sugar and seasonings. Boil 15 minutes. Add scraped new potatoes, and boil until potatoes are done.
