Scalloped Sweet Potatoes

Serves 8.

  • 4 lbs. sweet potatoes 
  • 3 c. light cream or half & half 
  • 1/4 tsp. salt, pinch 
  • 1/4 tsp. white pepper 
  • 1 c. brown sugar 
 
Peel potatoes and slice very thin. In heavy saucepan, combine potatoes, cream, salt, and pepper and bring mixture to a boil. Transfer mixture to buttered baking dish. Bake covered at 375 degrees for 30 minutes. Sprinkle top of sweet potato with brown sugar then continue to bake, uncovered at 350 degrees for 20-30 minutes.
